After the new patch engineering is actually one of the absolute best professions from a min/max perspective due to the engineering tinkers now stack with regular enchants – So you can enchant you cloak with +22agi AND the engineering flexweave at the same time, same goes for rockets on gloves, nitro boots etc.
So this actually gives you a lot more boost than any other profession so the best current profession combo is JC/engineering.
Plus in Cataclysm engineers will get the special cog “gems”.
